PORK!!! I bought two "natural" Duroc pork chops yesterday.
Before:
After:
The only seasoning on the pork was salt/pepper and then Poppy grilled them on the stove. The broccoli was tossed in olive oil, salt and pepper and roasted at 400 for about 20 minutes. I cubed up some potatoes, tossed with chopped onion, garlic, olive oil, salt and pepper and roasted those at 400 for about an hour and fifteen minutes.
I made a little dipping sauce for the potatoes:
1 cup Fage Greek style yogurt
1 teaspoon salt
1 tablespoon Kecky's Southwest Seasoning
1 teaspoon Agave nectar
Mixed it together.
For the pork...nothing better than sweet, hot and salty for the pork. I put a some apricot preserves in a little sauce pan, added some red wine, balsamic vinegar and red chili pepper flakes. Simmered it to burn off the alcohol.
INFINITY NOM!
Oh alright! Here's the recipe for Kecky's Southwest Seasoning...
Kecky's Southwest Spice
2 tbls chili powder
2 tbls paprika
1 tbls ground coriander
1 tbls garlic power
1 tbls salt
1 tbls dried oregano
2 tsp ground cumin
1 tsp black pepper
1 tsp cayenne pepper
1 tsp red pepper flakes
Combine all ingredients thoroughly and store in an airtight jar.
I use this pretty much as my go-to all purpose spice. It's great on veggies and eggs too!
Okay, see ya!
