I made Poppy's favorite cucumber-onion salad and some roasted fingerling potatoes. The cucumber salad is a take on the salad my Mom used to make. She got the recipe from my Grandmother (Dad's Mom). Instead of regular vinegar and sugar, I use seasoned rice vinegar:
Cucumber-Onion Salad
1 English cucumber, cut in half, lengthwise and then thinly sliced
1/2 Red onion, thinly sliced
Seasoned rice vinegar
sesame oil
salt
pepper
About an hour before serving, mix 1 part vinegar and 1 part sesame oil. Add pepper and a touch of salt. The mixture is up to you. Should be tangy but you should taste the oil as well. Sometimes I throw in sliced radish. Last night I threw in sliced endive. NOM!
Say, is it time for another exciting episode of THE HUNT FOR KASA KECKY? Of course it is...I really don't have much to tell you other than we've given our credit card authorization for the appraisal. Todd-The-Seller's-Agent is a real jerk. He's trying to brow-beat us for the appraisal, but it's really out of our hands. When you think about it, we just started this offer process a week ago. Anyway, we not-so-affectionately refer to Todd as Toad. He sends these emails to Lynnea-Our-Kickass-Agent that say stuff like:
Lynnea,
Appraisal?
$
:)
Now, what do you suppose that means?
This was yesterday's email from him:
"We still need to get the ball rolling on this appraisal. When will that be taking place? Your appraisal condition was to be lifted by Saturday, but since you decided to change lenders no one is putting too much pressure on you. We understand the delay. Still, we want this done ASAP."
This is like the fifth time he's asked about the appraisal. Starting to get on my last good nerve!
