For some reason, I was craving a baked potato so that's what we had...and they were loaded. I still have the leftover Roquefort Butter in the freezer so I took that out. I also had diced pancetta, cheddar cheese, chives and Greek style yogurt that I added some seasoning too and used that instead of sour cream. Steamed some broccoli and then I took a handful of Brussels sprouts and peeled each leaf off the little stem end...and fried those in the pancetta fat. Yeah, just a little NOM!
